Green Bean Salad SERVES 4

It’s bean season, so here is a recipe to use them up in style!

Ingredients 250g Green beans, tails off 250g mangetout, tails and spines off 1 clove garlic – peeled and finely crushed 1 red chilli – cut into fine strips 1 bunch of spring onions, chopped ½ tsp sea salt 3 tbs good extra virgin olive oil Zest of a lemon

water for four minutes, then run under the cold tap to stop the cooking process. They should be ‘al dente’. 2. Mix oil, garlic, salt, herbs and lemon zest to form a dressing, then toss over the cool beans. 3. Add chilli and spring onion, tossing into the beans, and finish by garnishing with flower petals. Serve and enjoy!

2 tbs chopped chives, mint, tarragon or dill (whichever you have to hand) Edible flower petals – optional (chive flowers, calendula petals, viola flowers? Anything you have to hand)
