Peaches and Cream Cheesecake Serves 6 – 8
Peaches and cream are a classic combination and just saying the words makes me eager to get stuck into this dessert. When I was growing up, only tinned peaches were available and we would often have them with ‘Dream Topping’, rather than fresh cream, which was considered a real luxury.
Ingredients 300g digestive biscuits 120g melted butter 700g marscapone cheese 3 egg yolks 3 eggs 1 teaspoon vanilla extract 150g caster sugar Peach topping 4 peaches, cut into quarters 100ml elderflower cordial 400m double cream

Method 1 Place the biscuits in a food processor and blitz them to fine crumbs. Add the melted butter and give the biscuit crumbs another brief whizz. 2 Turn the buttery crumbs into the bottom of a 24cm spring-clip cake tin and press them down well over the base. Place the tin in the fridge for 20 minutes to chill and firm the biscuit base. 3 Spoon the marscapone cheese into a mixing bowl and gently mix it with a wooden spoon until smooth. Gradually add the egg yolks and eggs, stirring gently until you have a creamy, smooth mixture. Add the vanilla extract and sugar and mix again. Pour the mixture onto the chilled biscuit base. Preheat the oven to 150°C/Gas 2. 4 Place the cake tin in a nest of aluminium foil– two sheets should be enough– and then place the tin and nest in a roasting tin. Pour 2cm of boiling water into the tray and place in the oven to bake for 1 hour. There should still be a wobble to the centre of the cheesecake when it is ready. Leave the oven on. 5 To prepare the topping, put the peach quarters in an ovenproof dish with the cordial. Bake for 20 minutes at 150°C/Gas 2, until the peaches are soft but not mushy. 6 When the cheesecake has cooled completely, whip the cream and spoon it on to the cheesecake. When the peaches are cool, arrange them on top.
