CHRISTMAS DINNER FROM MRS B’S KITCHEN

MUSHROOM STRUDEL If you have a vegetarian or vegan guest coming for Christmas, why not make them feel special by adding a delicious mushroom strudel to your Christmas table?

This recipe can easily be adapted to make it vegan by using some of the excellent vegan alternatives to cream cheese and yoghurt! You could easily change the mushrooms with something like roast butternut squash with roast kale, or roast cauliflower and flaked almonds? Ingredients 500g Mixed mushrooms – finely chopped – (we use a mix of chestnut mushrooms for texture and shitake for flavour, but use whatever mix you like) 240g cream cheese (or sub for a vegan version if liked – we like the Sainsbury’s vegan cream cheese) 240g sour cream (or use vegan alternative) 1 tsp salt 1tsp finely chopped dill 100g breadcrumbs 2 spring onions, finely chopped 15g finely chopped parsley 3 Warm up a wide frying pan and cook the chopped mushrooms on their own for about 10 minutes. This will drive off most of the moisture and intensify the flavour of the mushrooms. 4 Squeeze out any remaining water, then add the cream cheese to the hot mushrooms. 5 Mix well, then stir in sour cream, seasoning, breadcrumbs, herbs, lemon juice and finally breadcrumbs. 6 Place a sheet of filo pastry on the oiled baking tray, brushing the top side lightly with oil, then add four more sheets of pastry, brushing each in turn with oil. 7 Add half of the mushroom filling, fold in the sides, then gently roll into a neat log. 8 Brush the top with more oil 9 Repeat the process with the remaining pastry and mushroom filling, giving you two small strudels on the tray. 10 Sprinkle both strudels with poppy seeds or sesame seeds (optional), then place in the oven for 25 to 30 minutes until golden and crispy o the outside. 11 Serve hot, or at room temperature as part of your Christmas feast! 3tbs lemon juice 1 pack filo pastry Extra virgin olive oil for basting Method 1 Preheat oven to 180C 2 Oil baking tray
