If you called this prune mousse you probably wouldn’t get a very enthusiastic response, but ‘plum whip’ sold it to my family. It’s a good winter pudding and a welcome change from heavier pies and crumbles.

Method 1. Place the prunes in a

small saucepan and pour in water just to cover. Put a lid on the pan and simmer the prunes for 15 minutes. 2. Whip the cream in a bowl until fluffy and light, then set to one side. 3. Once the prunes are cooked, blend them in a liquidiser with 120ml of the cooking water. Add the honey and ice cream to the liquidiser and blend again. 4. Fold the prune mixture into the whipped cream and chill in the fridge. Serve with a scattering of chopped pistachio nuts.

Ingredients 225g soft prunes (stones removed)

270ml double cream 2 tbsp runny honey 250g vanilla ice cream A handful of pistachio nuts, chopped, for serving
